Roasted Red Pepper Hummus

Roasted Red Pepper Hummus

(yields 12 servings) 

 

Ingredients

  • ¾ cup of Sophia Roasted Red Peppers

  • 2 cans of Sophia Chick Peas (drained & rinsed)

  • ¼ cup of Sophia Tahini

  • 2 tbsp of Sophia Extra Virgin Olive Oil

  • 1 ½ tsp of Sophia Lemon Juice

  • 2 cloves of garlic

  • ¼ tsp of Sophia Sea Salt

  • ¼ tsp of cayenne pepper

  • Pinch of cumin

 

Instructions

In an electric food processor, combine roasted peppers, chick peas, garlic, tahini, lemon juice, cayenne pepper, cumin, and salt. Pulse a few times to dice the chick peas. With the processor running, pour in the olive oil and process until smooth. If too thick, add water. Transfer to a bowl and garnish with chopped roasted red peppers and olive oil. Serve with Sophia Crostini.
